Beet Ringmold

Servings: 1
Ingredients:

1 cn Shoestring Beets;                        -sugar
1 1/2 c  Liquid beet juice;and water       1/8 c  Cider Vinegar;
1/4 c  Sugar;(scant)                       1 pk Lemon Jello;(3 Oz.)
-=OR=-                                   -(sugar free)
-sugar sub to equial 1/4 cup

Drain beets and save juice. Add water to juice to make 1 1/2 cups liquid.
Put liquid in saucepan with sugar and vinegar. Bring to a boil. Pour over
Lemon Jello. Stir until dissolved. Add beets and mold.
