Coconut Orange Chicken


Servings: 1
Ingredients: 

  • 1 c  Flaked coconut;                     1 tb Cumin
    • 

  • 1/2 ts Salt;                               1 tb Brown sugar;
    • 

  • 1 1/4 ts Coriander;                          1 c  Orange juice;
    •

Place above ingredients with only half of the orange juice in a blender
containter and blend on high speed for 1 minute. Scrape sides and add
another 1/2 cup of orange juice. Cook chicken to intrustion on the bag.
Pour sauce over chicken and serve. A recipe I found on a chicken bag from
the store. (those big bags)
