Island Sweet Potato Pudding


Servings: 4
Ingredients:

  • 12 oz Cooked sweet potatoes;              2 ts Reduced calorie margarine
  • -peeled and cut in chunks         1/4 ts Ground nutmeg;
  • 1 md Ripe banana; mashed                 1 ts Rum extract;
  • 3 ts Brown sugar; firmly packed          1    Egg white;
  • 2 tb Reduced calorie margarine; 

Preheat oven to 350. In a large bowl, beat all ingredients except egg white
until smooth. Add a small amount of water if necessary, to get a smooth
consistency. Beat egg white until stiff. Fold gently into sweet potato
mixture. Spoon into a casserole that has been sprayed with a nonstick
cooking srpay. Bake, uncovered, 45 to 50 minutes, until lightly browned.

calories.
