MEATBALLS IN CHIPOTLE SAUCE


Servings: 8
Ingredients:

  • Chipotle Sauce; *
  • 1 lb Ground Beef
  • 1 lb Ground Pork
  • 2    Eggs; Large
  • 1/2 c  Dry Bread Crumbs
  • 1/2 c  Milk
  • 2 tb Onion; Finely Chopped
  • 2 tb Fresh Cilantro; Snipped
  • 2 ts Salt
  • 1/2 ts Pepper

Prepare Chipotle Sauce and set aside. Mix remaining ingredients together
and shape into 1 1/2-inch meatballs. Heat sauce and meatballs to boiling;
then reduce the heat. Cover and simmer until meatballs are done, about 20
minutes. Serve with hot cooked rice or noodles, if desired.
