SMOKED SAUSAGE ANTIPASTO SALAD


Servings: 4
Ingredients:

  • 1 lb Turkey Smoked Sausage or
  • -Turkey Polska Kielbasa
  • -to 1-1/2 lbs.
  • -sliced 1/8-inch thick
  • 3/4 c  Italian salad dressing
  • 6 c  Lettuce, torn
  • 8    Leaves romaine lettuce, torn
  • 3    Tomatoes, cut into wedges
  • 1    Cucumber, sliced
  • 1    Carrot, peeled and sliced
  • 1 c  Cauliflower pieces
  • 3 oz Black olives
  • 4    Green onions, sliced
  • 4 oz Fetz cheese, crumbled

Brown smoked sausage in a skillet and drain well on paper towels.
Arrange lettuce on a large serving dish and top with vegetables and
sausage. Add Feta cheese. Pour dressing over salad and serve.
Total preparation and cooking time: 15-20 minutes.
