LASAGNA


Servings: 6
Ingredients:

  • 1 lb Italian sausage                   1/2 t  Salt
  • 1 lb Beef, ground                        2 t  Oregano
  • 2    Celery stalks,                    1/4 t  Pepper
  • -chopped                            1 lb Mozzarella cheese,
  • 2    Carrots, chopped                         -shredded
  • 1 lg Onion, chopped                      1    Garlic clove
  • 2 lb Italian tomatoes,                   3 C  Cottage cheese
  • -canned                             2    Eggs, beaten
  • 12 oz Tomato paste                      1/2 C  Parmesan cheese
  • 10    Lasagna noodles,                    2 T  Parsley
  • -cooked

Combine meat, celery, carrots, onion, garlic; cook till soft. Add
tomatoes, tomato paste, salt, oregano and pepper. Simmer.

Mix together the cottage cheese, eggs, parmesan cheese and parsley.

Layer meat sauce, cheese mixture, mozzarella cheese and cooked lasagna
noodles in a baking dish. Bake at 375 degrees F. for 30 minutes. 10 minutes
before it is done, top with additional cheese.

NOTES:

* Simple cheese-and-tomato lasagna — This is Lasagna the way my mother
makes it. Servings: Serves 6-8.

* Freezes well.
