POTATO PAPRIKASH


Servings: 4
Ingredients:

  • 4 oz Cooking oil                         4 lb Potatoes, peeled
  • 2    Onions, finely chopped                   -and sliced thin
  • 1    Garlic clove, crushed               2    Green peppers, seeded
  • 1/4 t  Caraway seeds                            -and cut into strips
  • 1 t  Paprika                             4    Tomatoes, peeled,
  • 1 C  Water (up to 2 C)                        -seeded and chopped
  • Salt to taste

In a heavy-bottomed casserole, heat the oil and fry the onions and garlic.
Add the caraway seeds, paprika and water. Add the potatoes, peppers and
tomatoes. Simmer for thirty minutes.

NOTES:

course. Suitable for Passover. Servings: Serves 4 as main course.
