Apple-Apricot Bread

Ingredients:

  • 2/3 c  WATER, BOILING                           MILK
  • 1 c  APRICOT, DICED                    1/2 c  SHORTENING
  • 2 c  FLOUR, ALL-PURPOSE                3/4 c  SUGAR
  • 2 1/2 ts BAKING POWDER                            EGG, BEATEN
  • 1/4 ts BAKING SODA                         1 c  APPLE, CHOPPED
  • 1/2 ts SALT                              3/4 c  WALNUTS, CHOPPED
  • 1/2 ts ALLSPICE

Pour boiling water over dried apricots and let stand. Sift flour, baking
powder, soda, salt and allspice. Add milk to apricot juice to make 2/3 c.
Beat the shortening adding sugar gradually. Beat in the egg. Add dry
ingredients alternately with the liquid. Fold in the fruit and walnuts.
Spoon into a greased and floured pan, 9×5. Bake in 350F oven for 1 hour.
Cool on rack.
