Creole Sauce


Servings: 1
Ingredients:

  • 1 tb Vegetable oil                  28 1/2 oz Stewed tomatoes
  • 1 lg Onion, chopped                    1/4 c  Dry red wine
  • 2 lg Ribs, celery, chopped             1/2 ts Each, thyme, oregano, basil
  • 1/2 c  Chopped green peppers             1/8 ts Each, pepper, red and black
  • 2    Cloves, garlic, crushed

In a sauce pan, over medium high heat, heat oil: add onion, celery, green
pepper, and garlic. Cook about 6 minutes. Stir frequently. Add stewed
tomatoes, wine, tomato paste and seasonings. Bring to a boil. Reduce heat
to low and simmer for 30 minutes, uncovered. Stir occassionally. Cook untl
thickened.
Per 1/4 serving: 32 calories, 1 g protein, 1 g fat, 6 g carbs, 161 mg
sodium, 0 mg chol.
