French Dressing

Ingredients:

  • 2 tb Wine vinegar                             Fresh ground black pepper
  • 1/4 ts Salt                                     -to taste
  • 6 tb Olive oil

Place all the ingredients in a covered jar and shake well. Or, combine the
salt, vinegar and pepper, stir well to dissolve the salt, then gradually
beat in the oil. ..NOTE: You can also add 1/4 tsp dry mustard or Dijon
mustard. Or, you can ..add a Tbs of fresh lemon juice to replace 1 Tbs of
vinegar. Here’s some variations: ..Add a clove of crushed garlic, shake
well, let sit for a while then remove garlic. ..Add 1 Tbs finely minced
shallots or scallions. ..Peel and mash 1/2 avocado and gradually beat in
the dressing until smooth. ..Serve immediately over tomatoes or citrus
fruits ..Add 1/4 cup toasted sesame seeds and a small, crushed clove of
garlic. ..Great on cooked vegetables such as broccoli, cauliflower, etc.
