Southwestern Meatloaf


Servings: 6
Ingredients: 

  • 2 lb Ground chuck                        2 tb Taco seasoning
    • 

  • 1 c  Crumbled tortilla chips             1    Egg, lightly beaten
    • 

  • 1/3 c  Taco sauce                        1/2 c  Grated cheddar cheese
    • 

  • 2 tb Taco sauce                        1/2 c  Ketchup
    •

Combine ground chuck, chips, 1/3 cup taco sauce, seasoning, egg, and
cheese. Press into 9 x 5 x 3 loaf pan. Bake 1 hour at 325 deg f. About
five minutes before end of baking time, combine remaining ingredients and
spread over top of meatloaf, Continue baking. Makes 6 to 8 servings.
