Summer Dressing


Servings: 8
Ingredients:

  • 1 c  plain, low-fat yogurt               1 tb Fine chopped onions
  • 1/2 c  finely chopped cucumber             1 tb Lemon juice
  • 1/4 ts salt                                1 tb Prepared horseradish
  • 2 tb Fine chopped radishes               1 ds Cayenne pepper
  • 2 tb Minced parsley

Remove the seeds from the cucumbers. Combine all ingredients and mix well.
Refrigerate at least 2 hours before serving. Values per serving: CHO 3
gm., PRO 1 gm., FAT 0, Cal 17, Sodium 84 mg. with salt. Food Exchange per
serving: Up to 3 TBSP may be considered ‘free.’
