Ingredients:

  • 1 lb GROUND TURKEY                       6 oz TOMATO PASTE, LOW SALT
  • 1/2 c  CHOPPED ONION                       1 ts CHILI POWDER
  • 1/2 c  CHOPPED GREEN PEPPER              1/2 ts OREGANO LEAVES
  • 1 ea CLOVE GARLIC                      1/2 ts GROUND CUMIN
  • 3/4 c  DRIED KIDNEY BEANS, COOKED        1/8 ts GROUND RED PEPPER
  • 1 c  WATER                              30 ea FAT FREE CRACKERS
  • 3 ea MEDIUM TOMATOES, PEEL, CHOP

IN A LARGE POT BROWN THE TURKEY. POUR OFF FAT. ADD ONION, GREEN PEPPER AND
GARLIC. COOK 2 MINUTES, STIRRING OCCASIONLLY. ADD BEANS, WATER, TOMATOES,
TOMATO PASTE, CHILI POWDER, OREGANO, CUMIN AND RED PEPPER. COVER. SIMMER
FOR 1 1/2 HOURS, STIRRING OCCASIONALLY. SERVE HOT WITH CRACKER. PER
SERVING = (1 C CHILI - 5 CRACKERS) 242 CALORIES, 172 mg SODIUM, 34 mg
CHOL, 8 gm FAT - 3 gm SAT FAT. PERCENT FAT = 29.7%.
