TUNA AND RICE CREOLE


Servings: 6
Ingredients:

  • 2 T  Butter or bacon fat
  • 3/4 c  Rice
  • 1/2 c  Chopped green pepper
  • 1/2 c  Chopped onion
  • 1    Garlic clove
  • 1 cn VEG-ALL Mixed Vegetables
  • -(16 oz)
  • 1 cn Stewed tomatoes (16 oz)
  • 1 cn Chicken broth (12 oz)
  • 1 cn Tuna, flaked (12.5 oz)
  • 1/2 c  Shredded cheddar cheese

1. Heat fat in skillet. Add rice, green pepper, onion and garlic; cook 5
minutes.

2. Drain VEG-ALL.

3. Combine rice with stewed tomatoes and chicken broth. Bring to boil,
cover and simmer until rice is cooked, about 25 minutes.

4. Stir in tuna and vegetables; sprinkle cheese over top. Heatt until
cheese is melted.
