KOUSHRY (RICE And LENTILS)


Servings: 4
Ingredients:

  • 1 c  Dark lentils
  • 1 c  Long-grain rice
  • 1 ts Salt
  • 3 md Onions, chopped
  • 2 tb Oil

Put lentils and rice in separate pots. Pour enough boiling water over
the lentils to cover them. Add 1 1/2 c boiling water to rice.
Simmer both pots, covered, over low heat for 20 minutes. Drain and
combine in one large pot. Addsalt and another 1/2 c water. Cover and
simmer 15 to 20 minutes until both rice and lentils are tender.
Meanwhile, fry the onions in oil until golden. Stir them into the
rice before serving.
