Bhindi Masala


Servings: 6
Ingredients:

  • 1/4 c  Oil
  • 1 lg Onion, chopped
  • 10 ea Garlic cloves, minced
  • 2 ea Fresh green chilies, chopped
  • 1 ts Turmeric
  • 1 tb Cumin, ground
  • 3 lb Okra
  • Salt

Heat oil in large pot. Add onion, garlic and chilies. Fry over medium heat
till browned. Stir in turmeric and cumin and fry for 2 minutes. Mix in okra
and salt. Cover, reduce heat and simmer for 8 to 10 minutes, stirring
occasionally to prevent burning. Serve hot with plain rice or chapatis.
