Mark’s Carrot Cake


Servings: 1
Ingredients:

  • 1 c  All purpose flour
  • 1 ts Baking soda
  • 2 ts Baking powder
  • 1 ts Cinnamon powder
  • 1/2 ts Salt
  • 3/4 c  Vegetable oil
  • 1 c  White sugar
  • 2 c  Grated carrots
  • 1/2 c  Chopped walnuts

Sift and mix the flour, baking soda, baking powder, cinnamon and salt. Add
the oil and sugar. Mix well. Stir in the carrots and walnuts. Enusre that
all is well mixed. Transfer to a greased cake tin approx. 20 cm X 20 cm.
Bake at 350F for about an hour or until a knife inserted in the centre of
the cake comes out clean. Cool for a few minutes on a wire rack. Turn
out and let cool completely.
