Whisk together three tablespoons of white-wine vinegar, two tablespoons of finely-minced shallot, a tablespoon of Dijon mustard, a teaspoon of ground pepper, and 1/4 teaspoon of salt. Whisk in three tablespoons of olive oil, and drizzle half of the salad dressing recipe over your greens.
