1 cup (130 g) tapioca starch
1/4 cup (40 g) corn starch (or glutinous rice flour)
2 Tbsp (25 g) sugar
1 tsp (4 g) baking powder
1/2 tsp (2 g) salt
8 oz / 2 cups (226 g) low-moisture part-skim mozzarella cheese
2 oz / .5 stick (55 g) unsalted butter
1 large egg
1-2 tsp milk, as needed
Yields: 12 bread rolls
