I love to cook all year around, but it is so much fun in spring and summer when we have more fruits and vegetables in season. I got a little creative in the kitchen this week. Check out what I made for dinner and be inspired to create something new or check below for a few recipe links.

Catalina Dressing: *We loved this dressing! I made a few simple changes. I used coconut sugar instead of regular and because coconut sugar isn’t as sweet, I added a drizzle of honey. I also used grape seed oil instead of vegetable oil. This recipe makes a lot!
